Fruit Salsa and Cinnamon Chips

This healthy fruit salsa with pieces of cinnamon is one of our favorite summer appetizers! It's loaded with all the best fresh fruit of the summer, this easy recipe is always the success of any party or barbecue! It is ready in 30 minutes and is gluten-free, vegan, and paleo-friendly!

Ingredients

Fruit Salsa

  • 1 apple, diced
  • 1 pound about 3 cups chopped strawberries
  • 1 tablespoon granulated sugar
  • 1 peach, diced
  • 2 kiwis, diced
  • 8 oz raspberries
  • 1 tablespoon of honey
  • 3 TBS seedless fruit jams or jam
  • ¼ teaspoon pure vanilla extract

Cinnamon sugar cubes

  • 2 tablespoons granulated sugar
  • ½ to 1 teaspoon cinnamon
  • 2 tablespoons melted coconut oil
  • 8 tortillas

Instructions

Make the fruit salsa

  1. Add all the fruit to a large glass bowl (with a lid) and stir to combine.
  2. Add honey, sugar, vanilla, and jam and stir until evenly distributed.
  3. Put the lid on the bowl and keep in the refrigerator for at least 30 minutes or overnight.

Make the pieces of cinnamon sugar

  1. Preheat the oven to 350 degrees F. Grease two large baking sheets, set aside.
  2. Combine cinnamon and sugar in a small bowl, set aside.
  3. Melt the coconut oil.
  4. Using a pastry brush, brush each tortilla with melted coconut oil on one side.
  5. Sprinkle an even layer of cinnamon sugar over each tortilla.
  6. Cut each tortilla into eighths with a sharp knife or pizza cutter.
  7. Divide the cinnamon sugar tortillas evenly over two large baking sheets.
  8. Bake in preheated oven for 10 to 11 minutes or until just golden and begin to swell.
  9. Remove from baking sheet and let cool on a wire rack or plate.
  10. Serve with fresh fruit salsa!

This recipe is inspired by a dish that my sister-in-law was preparing for family celebrations!
