These deviled strawberries stuffed with an irresistible sweet cream cheese filling and then topped with crushed graham crackers. They are easy to make with simple and cheap ingredients! The taste just like strawberry cheesecake but in the form of finger food.

Strawberries are usually available all year round, but the most delicious juiciest strawberries you will find are spring and early summer months. They don't have to be uniform in size, and it's actually kind of nice to have a variety. After a few simple cuts and a little scoop out of the middle for the cream cheese filling, they're ready to go.

Ingredients

  • 20-26 large strawberries
  • 1 (8 oz) package of cream cheese (softened)
  • 1 cup heavy whipping cream
  • 1/3 cup sour cream
  • 2/3 cup white granulated sugar
  • 1/2 cup graham cracker crumbs
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Cut off the strawberries stems and slice them in half. Next, cut a small off of the back of each strawberry half so that they sit up straight. Then use a small melon scoop to carefully hollow out the middle (no need to take out much and make a small enough indent so that the cream cheese filling doesn't slide off).
  2. In a medium-sized mixing bowl, add the softened cream cheese, vanilla extract, sugar, sour cream, and lemon juice  (don't add the heavy whipping cream). Beat with an electric mixer until smooth. 
  3. Beat the whipping cream until stiff peaks form (about 5 minutes) In a different medium-sized mixing bowl.
  4. Mixture the whipped cream into the cream cheese until well incorporated. 
  5. Fill a piping bag with the cream cheese mixture (I used a star tip), and pipe it onto each sliced strawberry.
  6. Finish with a sprinkle of graham cracker crumbs.
