Taco Bites

These Taco Bites appetizers are fun, festive, and adorable party dishes that will be instantly eaten at any party, get-together, or just for a boost after school. They have big fans among the little ones! Children love this kindness of a bite more than adults seem. Very delicate, sweet, and with a taste just like tacos.

This also serves as a great activity to involve the little assistants. They had an absolute pleasure in assembling these treats. My four year old has sprung up endlessly on how to make tacos. Working with the little ones and creating these practical memories of "cooking together" is precious. It also gives them a chance and a lot of fun practicing their creative skills.

These appetizers take time to do because of all the little details. When I take the time and energy to prepare these little appetizers, I make extra taco meat to use the next day. It's another taco type food because it heats up well and tastes good until the third day if it is refrigerated when cooled, and saves you a lot of time for many delicious recipes such as nachos salad, tacos, wraps, etc.

Ingredients

  • ½ cup - sour cream
  • 25 - mini cherry tomatoes
  • 2 cups - grated iceberg lettuce
  • Tostitos Corn Chips Scoops
  • ½ cup - grated cheddar cheese
  • 1 - lb - Taco meat I used a half meat recipe as for the crunchy wraps

Instructions

  1. Use the Crunch Wraps recipe post to make the meat. Shred the cabbage, the cheese and cut the tomatoes in half. Place the sour cream in a sandwich bag, cut the corner, and set aside.
  2. Place the Scoop chips on a large dish. Add ½ tsp. taco meat in each spoon
  3. Apply sour cream to the meat, then place grated lettuce.
  4. Finally, garnish with a little grated cheese and half the tomato.
