These easy baked potato skins are so good. They make a great appetizer, a fun side dish with dinner, or a simple snack on match day. Serve with your favorite baked potato toppings.
They are also very simple to make !! Is there anything better than good with cheese, bacon, sour cream, and potatoes !? Nope!
This recipe is a huge time saver. Rather than cooking the potatoes, picking them up and baking them again, you can almost cut the cooking time in half by slicing the potatoes instead. It's a little different from ordinary potato skins, I guess, but they are just as delicious!
And when I can do something delicious in half the time and always impress my guests or my family, I'm totally on board. These baked potato skins were delicious!
I eat a lot of roasted potatoes with my meals. I'm just too lazy to peel the potatoes, so I love the recipes where I can leave the skin on my potatoes. Baked potatoes, potato wedges, fresh potato fries, and now these loaded baked potato bites. They are easy and so good!
Serves: 15 | Prep time: 10 mins | Cook time: 35 mins | Total time: 45 mins
Ingredients
- salt
- ½ cup grated cheddar
- ¼ cup bacon
- sour cream
- chopped green onions
- 2 to 3 large red potatoes
- 2 tablespoons cooking oil
Instructions
- Preheat the oven to 425F. Line a baking sheet with parchment paper.
- Cut the potatoes into ½ inch thick slices.
- Brush both sides of the potato slices with cooking oil, then place them on the baking sheet. Sprinkle with salt.
- Cook the potato slices for 15 minutes. Turn them over and continue cooking for another 15 minutes or until they are cooked through and lightly browned.
- Remove the potatoes from the oven and sprinkle with cheddar. Then sprinkle with bacon.
- Return to the oven for another 5 minutes.
- Serve with sour cream and chopped green onions.
