Chermoula sauce is easily one of the tastiest and most versatile sauces on the market. Made with simple ingredients, this miracle sauce can be used in many recipes. I use it to marinate meat and fish, and I like to add a spoonful to grilled vegetables and soup.

Chermoula is a tasty sauce popular in North African countries. It goes well with fish, seafood, meat, poultry, and vegetables. There are many versions of Chermoula sauce, some are spicier than others, but all very tasty.

As with most homemade recipes, you are free to make a few substitutions according to your taste. If you are not a fan of coriander, use parsley instead. Add a little extra cayenne pepper to make it spicier, or a few extra garlic for that incredible garlic flavor.

Ingredients

  • 3 c. 1 tsp ground cumin
  • 1/2 tsp. salt
  • 2 teaspoons of paprika
  • 1 cup chopped fresh cilantro
  • 1/2 teaspoon ground coriander
  • a pinch of cayenne pepper or to taste
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup chopped fresh parsley
  • 1/2 cup extra virgin olive oil
  • 4 garlic cloves, chopped

Instructions

  1. Place the cumin, coriander, and paprika in a frying pan and cook over medium heat for 30 to 60 seconds, or until fragrant.
  2. Mix these spices with the rest of the ingredients and mix them in a food processor until smooth.
